Caciocavallo Impicatto
A classic southern Italian street food. The distinctive tear-drop shaped caciocavallo cheese is hung over hot charcoal until it slowly starts to melt from the bottom to the top. Crusty Italian bread is toasted underneath on the grill. Then, the chef carves mouth-watering portions of the melted cheese, spreads it on the grilled bread slices, finishes with optional seasonings like truffle oil or a drizzle of honey, and serves directly to your guests.

Prosciutto Carving
The king of cured meats, prosciutto, gets the respect it deserves with this station.
