Fresh Pasta

You will learn how to make fresh pasta, from scratch. Once the pasta dough is ready, you'll learn how to roll it out using a traditional hand-cranked pasta machine, and then cut it into fettuccine.  All the while, a pot of sauce will be simmering on the stove, ready to be tossed and savoured with the fresh-made pasta. It doesn't get any better than that!

mozzarella

Is there anyone that doesn't love fresh mozzarella? We doubt it. It doesn't get any fresher than this: you will make your very own mozzarella, from scratch, and you'll be shocked at how easy it is. Once it's ready, you'll enjoy it with vine-ripened tomatoes, fresh basil, and a drizzling of extra-virgin olive oil. Magnifico!

Thin-Crust Neapolitan Pizza

Take-out or delivery pizza will become a thing of the past after you've learned how to make our authentic thin-crust neapolitan style pizza. You will learn how to make perfect pizza dough, using type 00 flour, and then get your hands dusty  while stretching it, topping it and sliding it into the oven. We'll provide a pizza peel, a high quality pizza stone for the oven, and everything else needed to make a variety of delicious pizzas.

Salumi

Few things exemplify Italian traditions more than the craft of salumi making. We will bring our traditional hand-cranked sausage machine and you'll learn how to properly season the meat, stuff the casings, and twist them into perfectly sized sausage links and sopresata. Once done, we will roast some and enjoy them on a crusty Italian bun.

Sugo

Italian cuisine would be nothing without the "sugo".  Every Italian family has fond memories of a pot of tomato sauce simmering on the stove for the Sunday meal.  You'll learn how to make the classic Italian sauces: traditional tomato, meaty bolognese, silky cream, pungent basil pesto, decadent carbonara, and a simple but classic aglio e oilo.  Of course, we'll boil up some pasta to sample each sauce. We recommend closing your windows, otherwise the aromas wafting from your home could have the neighbours knocking down your door.  

Bambini

One of our guiding principles at Cucina Mauro is the importance of family, and nothing is more important than passing on the traditions and love of food to our children. We will tailor our classes to your child-focused event and let them have fun stretching pizza dough and topping it with their favourite ingredients.  While the pizzas are in the oven, we will keep them busy rolling out fresh pasta, which they will make with their own hands, on our traditional hand-cranked pasta machine. To top it off, each child will get their very own chef hat. The best part is that the entertainment will also be how you feed them!
